While ...That plate you let the pork chops rest on? While the breaded pork chops are baking, either clean that plate or just put a stack of paper towels on top of it. (I usually use a few sheets from the local freebie newspaper, with one or two paper towels on top - cheaper than going through tons of paper towels!) And with rinsing (or possibly actual washing), I rarely go through more than one set of measuring cups for any given kitchen adventure. <br /><br />As for buttermilk - if you don't use it often, just make it yourself. One tablespoon or so of vinegar or lemon juice to a cup or so of milk, let rest for 5 minutes or more, and you're good to go. I make buttermilk biscuits and pancakes all the time this way. For biscuits, I usually use rice wine vinegar, as it's lighter and I don't usually want the lemon flavor. For sturdier food, like those chops, I'd probably use plain white vinegar. <br /><br />Hope that's helpful :)Anonymousnoreply@blogger.com
