My quest to use things I have around continues. Here, we have some white bean miso hummus I made, cucumber slices, romaine lettuce, red bell pepper, red onion, some sweet potato amaranth patties with a curry sauce (on the side) (recipe from Food & Story), and yellow rice with peas and carrots (somewhat inspired by Big Oven).

This was a layered protein meal; I was deliberate in adding lots of different sources. There are peas and almond butter in the amaranth patties, and amaranth itself is a complete protein source. I also put peas in the rice, and had the white bean and miso hummus. It worked out fine.

I wasn't sure what to expect with these amaranth and sweet potato patties, but they were delicious, especially with the deceptively simple curry sauce. I worried that I wouldn't like a sauce that consists essentially of flavored coconut milk thickened with tapioca flour, but you know, it worked. It probably helps that it is pretty salty, but I loved dipping my amaranth patties in it! It was also great poured over my "salad."

I'm not sure the hummus did much here other than give me some more protein, but it was fine; it doesn't always have to "do" things to be worth having.

Pantry utilization may be slow going, because among the things identified as use-it-and-don't-replace-without-a-reason things, this just used a little bit of amaranth and a little bit of a giant bag of bread crumbs I have (I used the regular kind rather than gluten free in this recipe), but that, I keep reminding myself, isn't the point. The point is that I'm enjoying what I have and I'm exploring new things without overwhelming myself. And it's working!

So here's to that. And let's see what I come up with for tomorrow.
