Small Plate #1
I've been meaning to make this recipe for an amaranth meatball sandwich from Yuzu Bakes for quite some time. Though the meatballs ended up being more like patties than balls--probably I should have added more flour, but oh, well--they were still delicious.
I had fresh thyme on hand, so that was the herb I used. I also added some lemon zest, so they were extra lemony. I put my little patties in a hot dog bun as directed by the recipe along with some vegan mayo, cucumber, tomato, and spinach. This was a wonderful, light meal, and pretty easy to make.
My pantry utilization quest as nearly managed to use all my amaranth, and I've really enjoyed getting to know this ingredient better. I hope that I'll still be able to get it, but if I can't, at least I'll have my memories.
Sigh.
