Cabbage stew and saltines: Better than it looked!
We're going to pretend this doesn't look like a bowl of sludge, and ask that you accept my reassurance that this was quite good, even if it did turn into more of a stew than a soup. Sometimes, one doesn't really have time to cook at the time that is convenient for eating, and one prepares. And when one comes home and peers into one's slow cooker and finds sludge, one just goes with it rather than bothering to thin it.
I can assure you that if you thin the soup out when reheating the leftovers, it's lovely and it also looks more like soup. But that's not important right now.
The cabbage soup recipe from A Virtual Vegan gives slow cooker directions, so I followed those, although I cut the recipe in half (and I don't think a whole recipe would have fit in my slow cooker anyway). I made my own vegan ground "beef" from TVP and seasonings, and I think that may be why my soup is sludge. TVP is very absorbent! But it was tasty and I didn't have to buy any new ingredients to make it, which is what I was going for. I know I seem to be having a love affair with cabbage recently, and I do love cabbage, but mostly I'm just trying to get through the cabbage at this point. I still have more cabbage after this, too! Cabbage is the gift that keeps on giving!
With this and a few more bowls of leftover soup, I finished off a box of saltine crackers that has been in my pantry for ages. So this was a use-it-up special in more ways than one, I guess.

Full size cabbages in 1-2 person households really do take a... long... time. They just do (at least, if eaten as Part Of This Balanced Meal rather than just eating mainly cabbage). On the plus side, cut cabbages do tend to last a long time (just need to trim the cut edge, usually).
ReplyDeleteYes, one of the reasons I love cabbage is how long it lasts! But I don't buy it all that often because a cabbage is a commitment. My store sells mini cabbages now, which I rarely pick up, but which does help with the cabbage issue.
