Small Bowl #17
This is not much to look at, but it was pretty great: Buldak TVP, Korean-style beet salad, and broccoli stalk namul over rice.
I found the buldak TVP recipe at Samsung Food, part of a larger "bowl" recipe I didn't make all of. But the TVP was good, and also really easy. It was very spicy, though--kind of challenging. Sometimes, I want spicy things, though.
I've made both broccoli stalk namul (recipe from Plant-Based Matters) and Korean beet salad (recipe from Lavender and Macarons) before. I love them both and they were both great here.
Although I've been switching over to brown rice more, I let myself run out and I didn't buy more right away. I'm trying to get myself more used to not having everything I consider a "staple" on hand all the time without feeling panicked. Although I do sometimes feel anxious about it, I think experience with this will help.
