I tried a new-to-me easy recipe: Tofu steaks quinoa casserole by Cooking with Peanuts. I made some simple brussels sprouts and carrots to go with it, though given that the casserole has a hefty amount of kale in it, and some sun-dried tomatoes, that might not have been fully necessary. (I eat vegetables from desire, though, not necessity, and from that perspective, I just wanted them!)
On my use-it-up quest, this finished off a jar of sun-dried tomatoes I've had in my fridge for a while. It was a very easy recipe, though I think I might make a few changes if I made it again to add a little more depth of flavor--I think nutritional yeast would have been a great addition. Oh, well. Next time!
As it was, this was satisfying, and gave me leftovers for several more really easy meals--that's a win-win in my book.
