I need to understand why I sometimes crave potato tacos. Maybe I'm deficient in something Maybe they're just delicious? But anyway. I made my favorite taco recipe, veganized from Kitchen at Hoskins, and had that with some Mexican rice (this is a carb-fest; I am not sorry) and some vegan charro beans.

I can happily report that these potato tacos were still absolutely amazing. I can also happily report that I'm developing better skills with getting stainless steel not to stick. Just get it hot enough before you add anything. The potatoes didn't stick at all this time! I felt like I'd leveled up my cooking skill in the Sims or something.

I should probably serve these with double beans and no rice, but then I wouldn't get rice. And I love rice! So...

  1. I have an abiding love for beans and rice. A few of the places I've lived and worked (Nicaragua, Guatemala, Tanzania), we ate beans and rice every day. I was always the only ex-pat person I knew who never tired of daily beans and rice. I know that potato tacos are a thing but have never had them or made them. Will try making them this summer. I can imagine that these could be very delish.
