ECO Lunch Box Three-in-One #103

 


A satisfying meal based on what I had around: Some brown rice salad with carrots and raw zucchini in a tahini dressing (my favorite recipe for rice salad), blueberries, clementine segments, green apple slices, and some leftover miso tofu.

I probably should have had a hot lunch but this was calling to me. Sometimes you just have to answer the call!
