Dinner Bowl #69
Because one can't have rice with every meal (well...one could, but...I try not to), this is the next best thing: Orzo! Here we have some of my favorite vegetables, too: My usual default veggie side of mushrooms, tomatoes, and spinach; buttery carrots; and broccoli cheese orzo and beans (recipe from The Yummy Vegan).
This was just something simple and comforting, no use-it-up pressure (though it uses nothing I wouldn't normally have around, and I didn't specifically buy anything for it). The orzo recipe was pretty great, though if I made it again I'd add the broccoli earlier and cook it for less time, because the pasta itself got super soft, and the broccoli still had more crunch than I'd like but I was afraid the orzo would disintegrate if I cooked it too long. I think overall recipes like this are better baked, but of course, it's not oven season.
But a recipe that uses both soy milk and beans? Perfect for the not-interested-in-protein days.
