Dinner Plate #82
I have been feeling sluggish, so I needed something easy, a no-thinking type of meal. Here we have Mexican rice with carrots added, some refried black beans, and a chick'n taco made with chicken-style fajita seitan, onions, peppers, mashed avocado, and homemade pico de gallo.
I'm not necessarily in the best place right now, but meals like these do help! I wish you could see more of my tacos than the tortilla--generally that's what shows up--because I promise you it was also really pretty. And pretty tacos are tastier, in my opinion. When I don't feel like eating, things like this really matter.
