Recipe: Arugula-Tomato Salad Pesto Toast (Vegan, Nut Free, Soy Free)


 Are you craving something savory for breakfast? Trying to eat more greens? Just love the taste of pesto? Sometimes I have all that going on at once, so I came up with this one morning. I hope you enjoy it if you try it!


Arugula-Tomato Salad Pesto Toast
Serves: 1

1 slice sourdough bread (or bread of choice)
1 tablespoon vegan mayo
1 tablespoon vegan pesto
1 handful of baby arugula
1 teaspoon fresh lemon juice
1/2 teaspoon olive oil
3-4 cherry tomatoes
Salt
Pepper

Toast the bread. While waiting, make your toast toppings.

Mix mayo and pesto together.

Toss arugula with lemon juice, olive oil, and a bit of salt and pepper.

Slice the cherry tomatoes.

When the toast is ready, spread it with the pesto-mayo mixture, then top with the arugula, and finally the tomatoes. If desired, sprinkle with fresh ground pepper and some flaky sea salt.

    1. Toast is typically paired with either a soy latte or a smoothie with protein (soy milk, nut butters, chia seeds, hemp seeds, etc.). But yes! I definitely do have keep track of my protein!
