Little Dishes #9

 


A Korean-inspired assortment: cucumber salad with onions, yangnyeom chickpeas, steamed rice, pickled red onion, and Korean carrot salad (which is really Ukranian-Korean, but I think it goes with everything).

I used a recipe for the cucumber salad that called for 1/4 of a red onion, and I think this was a lot more onion than intended. They probably had a smaller onion. But oh, well; my oniony cucumber salad was delicious.

The chickpeas were amazing, as always they are.

My pickled onions were also somehow more oniony than typical; I think I didn't slice them quite thinly enough. But they were still tasty, and went perfectly well with everything else.

Being in, I take it, an oniony mood, I also cooked some onions with the garlic for the carrot salad, but that was largely because I got my recipe mixed up. It was still good, but next time I'll probably leave out the onion. There is only so much onion a person can eat!
