Dinner Bowl #101
This is just your basic fall grain bowl: Quinoa, roasted veggies (cauliflower, broccoli, yellow squash, and sweet potatoes), arugula, cucumber, and tomatoes, all topped with a lemon tahini dressing, pumpkin seeds, and sunflower seeds.
Halfway through my meal I realized I'd forgotten to add in the chickpeas I also roasted, so imagine those were there.
This was very good, but of course, I expect nothing else from such a meal! I love simple things like this.

Beautiful bowl, but a great dressing--in this case, lemon tahini--and some seeds (which I would always lightly toast) will take a bowl to the next level. Healthy deliciousness!
