There are more colorful veggies here, but they're hidden--oh, well! Here we have a cheesy veggie rice casserole with a saltine cracker topping, a quinoa burger with an improvisational jalapeno cilantro sauce, and corn sauteed with onions.

The casserole actually has a ton of veggies in it--carrots, broccoli, onions, and red bell pepper--but you just can't see them. I probably should have thought this through more. But it was delicious! I used some leftover cashew "cheddar" sauce, cooked long grain rice, and some leftover cooked short grain rice here. It was very easy and one of the best things I've made--but I know that about this casserole; I will always love it.

The burger was a way to use up quinoa flakes (still working on that!) and the recipe is from (where else?) Simply Quinoa. They were pretty easy to make and cooked up beautifully, so I'll definitely want to experiment with different ways of serving those.

I had corn on the side because I felt I needed another veggie; I don't know if that's true, but it was good.
