I had planned to have something else on this day, but then my potatoes had liquified. (Yay, summer. How much happier I will be when it's over!) So here is my pivot: Guided somewhat by a recipe by The Mom 100, I made a lentil salad. Then, I gathered up some random ingredients to make a pasta salad. It had peas, the end of a block of Daiya cheddar (hardly any left of that, really), some scallions from my kitchen window jar o' scallions, and red bell pepper. The dressing was mayo with with salt, pepper, and dill pickle relish. We do what we can.

And really, this turned out to work for packed lunches for several days, so I can't complain too much, even if I do feel pretty irritated at having to chuck 5 pounds of potatoes I didn't realize were on the verge of rotten when I bought them.

Did I mention that summer isn't my season?
