Monbento Original #16 (Single Tier)

Corn and (Violife) Parmesan pasta salad, carrot sticks, red bell pepper strips, and black olives.

This is the vegan version of an old favorite, although I think some scallions would have perked it up, had I had any scallions. And this meal was a bit low on protein. But it was really good, and I was grateful to have it.

The Violife Parmesan is the only vegan Parmesan I know of that comes in a block for shredding yourself. I don't know if it tastes better that way but it is kind of fun to be able to grate it as you wish.

    1. I love cheese and creamed corn jaffles.
      I had a really good recipe somewhere for a cheesy corn soup, I will have to find it!
      Oh, and this just reminded me that I have been meaning to make Julie's corn and mac bake for ages!
