Dinner Bowl #54
A wholesome bowl of deliciousness for late winter: Butternut squash quinoa with chickpeas (recipe from From my Bowl), mixed roasted vegetables (cauliflower, broccoli, red bell pepper, brussels sprouts, and red onion), some green leaf lettuce and chopped cucumber, and a maple tahini drizzle.
This was a pretty simple meal, which is what I needed on this day. It did not use up anything "weird," just staple things and veggies I had around, but my progression through my pantry utilization quest is at least in part about not having the need to buy things, and this meant I did not need to buy things. And after I have used these things, if I do buy them again soon, I will use them pretty quickly in something else. And so here we are.
The dressing was really what brought this together. I don't think I would have enjoyed it that much without a dressing. but with that? I polished this off and filled myself with nutrients for another day.
If you need to avoid allergens, incidentally, this is free of major allergens.
Maple tahini dressing sounds wonderful. This looks like a great autumny dinner.
ReplyDeleteWell, you're in the autumn, I suppose, so it might be good for you now! I'm kind of pretending summer isn't coming--but as I told myself recently, I have a lovely spring to look forward to, and I should be leaning into that. So maybe I should let go of the cold-weather foods. We'll see.
