Monbento Square #54 (Double Tier)
This was a lunch I packed for myself for an unusual scenario: It was not a work day, but I had tons of errands to run.
Whee, adulthood.
Anyway.
This is some corn chips and jarred salsa (a very rare treat for me, but I had the salsa already and it seemed to demand corn chips), kiwi, clementine segments, banana slices, raspberries, and a banana-peanut butter-chocolate tahini sandwich on seedy multigrain bread.
This was good. It got me through my weird day. To boost the protein, and because it was a snowy day in which a purely cold lunch wouldn't have worked out super well, I also packed an insulated bottle of hot grain coffee with soy milk, which went perfectly with the fruit and sandwich, if not chips and salsa. (It went horribly with chips and salsa.)
On the "using what I've got" scale, this really was just about using things in the fridge and taking advantage of the salsa, i.e., more about enjoying things than trying to clear the decks. And that, I think, is perfectly fine, sometimes.
