To use up stuff in the fridge before finally going grocery shopping, I made this in my rice cooker. It consisted of rice, smoked tofu, edamame, carrots, zucchini, onions, bell peppers, and garlic with a gochujang-based sauce. That gave it a good color but wasn't quite spicy enough, and it needed some more dimension, so I topped it with sriracha mayo, flaky sea salt, and sesame seeds.

This was actually pretty great! There's something to be said for minimal effort, sometimes.
