Dinner Bowl #111
A meal for the exhausted version of me gearing up for a snowstorm (by the time you read this, I will be under nearly two feet of snow, if the forecast for when I wrote this is correct): butternut squash and lentil stew over jasmine rice.
The stew is from a recipe at Eatwell 101. I raised my eyebrows at the quantity of cayenne it called for, and should probably have listened to my instincts, but I put most of what was asked for in there and...it was spicy, but good! Not too spicy to enjoy, really, but a lot spicier than I'd prefer. I didn't have the kale the original recipe asked for, so I substituted baby spinach (which I like better anyway). It worked out great, and I'm slowly making my way through that gigantic squash I bought.
The jasmine rice is one I'm now making using a tutorial I found at Hungry Lankan. I don't know how or why but it makes plain jasmine rice into something I want to eat a bowl of by itself--truly so, so delicious.
