Dinner Bowl #108

 


Sometimes, you just need to raid the fridge and make some soup. Here, I drew inspiration from a simple cabbage and potato white bean soup recipe found at 101 Cookbooks, but I added cauliflower since I only had a little cabbage, and I poured in a half cup of coconut milk I had in the fridge, plus, to boost it a bit more, some homemade chick'n seasoning (made from nutritional yeast, mostly) and lemon juice. It turned out really well!

On the side, I had a homemade cornbread muffin, from my favorite recipe for such things (at Minimalist Baker). If I make the recipe in a standard muffin tin, it makes five muffins, not two, and that just meant I got to have a second muffin for dessert, spread with some vegan butter and maple syrup. This was so good.

I may complain about the snow never melting, but honestly, I do love winter. Some meals remind me of that, and this was one of them. It was very easy to make, and so, so comforting.

  1. This soup is one of my favs from 101, and vegan cornbread (variation on these corn muffins) from Min. Baker is another. Beautiful meal.
