If you're new to veganism, there is a truism: When all else fails, put stuff on bread. And here's some stuff you can put on bread that will make you want to get out of bed in the morning.
Usually, if I have toast for breakfast, it's not the only thing, though it's often the main event. I'll make a soy latte or a smoothie to go with the toast a lot of the time, and/or have fruit salad and/or non-dairy yogurt. But sometimes I do just have a couple of interesting toasts for a meal. And why not?
1. Red Passion Kiwi Pistachio Cream Toast (Soy Free)
If green kiwis are too tart for you, try red passion kiwis--they're so sweet! Here, I spread pistachio cream on some whole grain toast and topped that with red kiwi slices and hemp seeds. It was easy, delicious, and beautiful.
2. Edamame Guacamole Toast (Nut Free, Soy Free)
If you love avocado toast but want it to have more protein, this may be the thing for you! I found the recipe for the edamame guacamole at Cooking for Peanuts. It's full of delicious things--mukimame, technically (edamame is the unshelled part), avocado, tahini, jalapeno, spinach, and seasonings--to make this spicy, savory green spread. I spread it on multigrain-and-seed bread and then topped it with some chopped cilantro and sesame seeds as suggested in the original recipe as a garnish option. This was so good! I want to try this edamame guacamole with sweet potatoes, too, because I also love guacamole with sweet potatoes and have often wished that could be a whole meal.
3. Crunchy Biscoff Banana Toast (Nut Free, Soy Free)
Start with multigrain toast. Spread with crunchy Biscoff. Top with banana slices. Enjoy! (Reminder: simple things can be delicious.)
4. Nutty Golden Cherry Blackberry Toast (Soy Free)
Golden cherries appear and disappear very quickly in the summer. I took advantage of that for this breakfast toast with a mixed nut and seed butter, golden cherries, blackberries, finely chopped pecans, and hemp seeds. It was delicious!
5. Avocado Toast with Broccoli Sprouts (Soy Free, Nut Free)
There's not a whole lot of instructions to give here. Mash avocado and put it on toasted bread. Add flaky salt, cracked black pepper, and broccoli sprouts. Enjoy! The texture contrasts are nice here, and broccoli sprouts are very mild, so they aren't overpowering.
6. Chocolate Peanut Butter Hummus Toast
I'm not sure if this actually counts as hummus per se, but that's what it's called in the recipe I used
from Ambitious Kitchen. I made it with soy milk and peanut butter, and that, with chickpeas, is quite a formidable protein combination! (Note: I am not a medical doctor and this is not medical advice.) I spread this over seedy multigrain toast and topped it with mini chocolate chips. This is unusual, and also quite satisfying.
7. Hummus, Eggplant, Red Pepper, and Asparagus Toast (Nut Free, Soy Free)
This was borne of the leftovers from a catered meal at work. I spread some whole wheat toast with hummus, then eggplant dip, and then topped it with blanched asparagus and slices of roasted red peppers. Although I might not often have this combination available, I would love to have it again--it was great!
8. Plum Chia Jam Toast (Nut Free, Soy Free)
Isn't this a gorgeous color? This is a chunky plum chia jam from the
recipe from Plant Based Folk on some whole wheat toast. It's a very simple recipe, but
so good!
9. Cinnamon Peanut Butter Banana Toast with Cacao Nibs (Soy Free)
Some things are virtual classics for a reason. But you can explore new ways to have them! Here I have cinnamon peanut butter on whole wheat toast with banana slices and cacao nibs. The flavors and textures go beautifully together here. I had this with hot tea, non-dairy yogurt, a clementine, and some grapes, and it was just perfect as a way to start the day.
10. Curry Hummus Toast with Pickled Onion, Cilantro, and Sesame Seeds (Nut Free, Soy Free)
Sometimes, something just occurs to me, and I have to have it. That was where this came from, and I'm glad I listened to whatever part of my brain insisted on it, becasue itw as delicious! I started with some whole wheat toast, which I then spread with curry hummus using
a recipe I found at Ambitious Kitchen. It's slightly sweet from some maple syrup and also oil free, relying on tahini and aquafaba for its creamy deliciousness. I piled this toast with homemade pickled red onion, black sesame seeds, and fresh cilantro. It's rare that a winter breakfast is quite so colorful, and I loved how this looked as much as I loved how it tasted!
