Dinner Plate #70

 


Here we have some lupini bean Spanish "rice," a mushroom and onion quesadilla, sliced avocado, and a version of rajas con crema using bell peppers instead of poblano (see the Curious Chickpea recipe for the inspiration).

This was a meal made out of what I had, when I was buried under nearly two feet of snow. If I had everything I might have wanted, I would have wanted refried beans, but the lupini "rice" has tons of protein, so it was fine. I ended up needing a lot of hot sauce to make the peppers taste right, but they were delicious, and who doesn't love a quesadilla? or avocado?

I recently saw something on a video by Studio Vegan about snowstorms that resonated with me: You don't have to get ready if you stay ready. And that's my philosophy throughout the winter. I will never have to rush to the store before a snowstorm, because I will always know I can pull something together, even if I am delayed a bit before I can get everything I want.

So stay ready! Winter will eventually end!
