I had some smoked tofu I needed to finish, and that was the inspiration for this meal: smoked tofu spaghetti carbonara (recipe from Cheap Lazy Vegan), garlic & herb breaded delicata squash (recipe from Minimalist Baker), and steamed broccoli and carrots.

I used smoked tofu in the carbonara recipe rather than medium firm, and I didn't add as much liquid smoke. The tofu itself was delicious. I found the sauce rather bland, so I ended up adding crushed red pepper flakes to perk it up. It was fine, but just not something I'd likely make again. It needed something, being primarily cashews and nutritional yeast, but I couldn't pinpoint what it needed. Maybe miso?

I didn't have panko this time for the squash, so I just used some bread crumbs I had. They were just as delicious, but less crispy, and the breading had more of a tendency to fall off. Still, this remains my absolute favorite way to have delicata squash. It's one of the best recipes I know in general, really!

Why did I steam my carrots and broccoli, rather than roast them? I asked myself this while I was doing it. But I guess that was the mood I was in, and I went with it.
