Here's a fun, quick meal (well...by my standards): Steamed rice, Korean-style carrot salad (recipe from Lavender and Macarons), stir fried snow peas with garlic (recipe from Green Bowl 2 Soul), and bulgogi-style TVP (recipe from One Green Planet).
I originally wanted zucchini. The store had none, and that resulted in one of those panic-pivots that made very little sense but ultimately worked out--so I bought a huge bag of snow peas. Prepare to see more snow peas. But seriously, this stir fry was so good! I thoroughly enjoyed it. It was a bit spicy and garlicky and just so nice.
TVP bulgogi is one of the easiest things imaginable. And it, too, was delicious and garlicky and a bit spicy; I have made similar things before and I'm sure I probably will again.
The carrot salad is forever one of my favorite things.
I've been having brown rice more often these days, but I wanted a quick meal, so the fast-cooking Calrose it is! And I also love Calrose rice.
All in all, a great meal, for a great day. If you use gluten-free soy sauce, this is gluten free, so that's why I've tagged it such; make sure to check your ingredients if you need that.
