Dinner Plate #73
This was a kind of meal prep dinner: Potato, beet greens, and sausage pizza with dilly cucumber white bean salad (recipe from From My Bowl).
I didn't have time to do my usual thing for meal prep, because I'd been grocery shopping that day, but I still needed a way to have more meals out of prepping than I would have if I just made one dinner with leftovers. So I made this pizza (which can stand alone as a meal) and had it with this salad (which is a great main dish for a packed lunch with crackers and fruit on the side). They go well together, too!
The pizza is one I've made before, veganized from an omnivore recipe using Beyond sausage and non-dairy mozzarella. It remains my absolute favorite way to use beet greens. The "sauce" is just garlicy olive oil, but it somehow works.
Making pizza somehow reminded me of my very first vegan pizza. I didn't make my own crusts back then, favoring, for whatever reason, using the prebaked crusts you pick up in the grocery store. Finding a crust seemed to open new worlds for me. So many of them weren't vegan, so I just didn't eat pizza for the longest time.
