Dinner Bowl #116
I was suddenly exhausted and had to pivot my meal plans, but oh, what a pivot! I made some basic yellow rice in my slow cooker, baked some frozen falafel balls, whipped up some roasted red pepper hummus (because I already had the peppers), and made a simple salad of lettuce, radishes, and onions.
This isn't as good as when I pull out all the stops, but it was a huge improvement over yet another bowl of peanut butter ramen!
