Lunchopolis #102

 


Here's a slightly-off-the-beaten-path lunch: Popcorn, seed crackers with non-dairy cheddar cubes, a banana-(vegan) mayo sandwich on Sola protein bread, and berries.

If I don't get cooking done on the weekends, my lunches don't have leftovers to draw from, so I get things like this. Fortunately, this was pretty great! I love how the protein-hefty bread means I can have a lower-protein filling in a sandwich, because I was not in the mood for peanut butter. (Scandalous, I know!) I've loved banana and mayo for ages. It may not be the typical thing, but it's honestly great.

Popcorn went remarkably well with this. The seeded crackers were on sale and they were not as good as, say, Ritz, but they were pretty tasty with the cheese. So I did get some savory elements.

As for the berries, it may not really be berry season, but something in me was rebelling in many directions. So here we are.

  1. I eat berries year-round (fresh--and local, when available--and frozen when not, and always organic as berries are on the "Dirty Dozen" list). Despite having ample, delish home-cooked meals growing up, I loved mayo and used to make mayo and mustard on white bread 'sandwiches', lol. Bread is now mostly whole grain, and I usually make my own in my bread maker (and usually add oats, freshly ground brown flax seed, etc). Really like being able to control the ingredients in my bread/burger buns.

    1. It's nice to be able to accommodate our own needs and tastes! This is actually a whole grain bread, and the protein is from beans and seeds, but of course homemade is still preferable. But some days, we do what we can, and we can't always hit the peak of what we can on other days.
