Dinner Bowl #124

 


This is an improvisational meal: Quinoa cooked in vegetable broth mixed with some roasted sunflower seeds and parsley, various roasted vegetables I had in the fridge and freezer (cauliflower, broccoli, carrots, and brussels sprouts), a few prepared mushroom bites, and a miso tahini sauce.

This was pretty great the first time, but for some reason--probably the mushroom bites--leftovers were really disappointing. Oh, well.
