I had some leftover vegan chorizo in the freezer, as well was some homemade Mexican rice, so I decided to make nachos. The plate has refried black beans, said rice, some black bean chips, homemade cashew-based nacho cheese sauce, veggie chorizo, black olives, homemade pico de gallo, and Tofutti sour cream.
As the efforts I make have gone lately, I think this is one of my best! I did mix up parsley and cilantro and parsley isn't quite the flavor you want in a salsa, but you know, we did what we could. Sometimes that's all that's possible!
