Monbento Square #5 (Double Tier)

Kiwi; black olives; refried beans; Mexican rice; a quesadilla made with Daiya cheddar, Beyond Chicken strips, and onions; and the very last bit of a tub of Tofutti sour cream.

This was breakfast and lunch, really. I ate some of the quesadilla for breakfast. It was one of those days--but it was good!

I was going to give you a recipe for my Mexican rice during this #VeganMofo, but when I made this I forgot to put the salt in and it was definitely not worthy of sharing with you in spite of the fact that I measured everything. I was so disappointed! But until I know that my measurements match my eyeballing and I can make the rice the way I really like it, I won't be able to share it, unfortunately.

I've been rationing myself with the Beyond Chicken because it really does appear to be gone forever. I'm so disappointed in Beyond Meat for not making it anymore. I wish some other company would make something like these. All the other non-breaded chicken I've had so far is more like white meat, but Beyond Chicken was like dark meat--firmer, and more flavorful somehow. It held up in soup. Can you recommend a good substitute for Beyond Chicken? I'm a vegan at sea these days and my freezer stocks will run out eventually.

  1. I didn't know they weren't making Beyond Chicken anymore, but now that I think about it, I haven't seen it in stores recently...

    1. They don't make the Beast Burger anymore, either. I'm disappointed in Beyond Meat. Those products were more popular among vegetarians and vegans and were apparently making the brand seem less appealing overall or something.

  2. Oooh this meal looks incredible! It's too bad they don't make the Beyond Chick'n Strips anymore. I feel like Gardein makes grilled chick'n patties, you could maybe cut them into strips? I've ever tried them though so I don't know how they compare. Also, I really want quesadillas now, ha!

  3. They make breaded patties, and they're good, but wouldn't work in the things I use non-breaded stuff for. I don't know if I've done it wrong, but when I've used the suggested Gardein chick'n scalloppini for things like this, it just turns out super mushy and kind of gross. For a quesadilla, the Morningstar Farms strips might work, but in things like soup, I don't think they'll hold up.

  4. That is a shame about the Beyond Chicken. We never had it here... I don't think... maybe it was around for two seconds in a vegan speciality shop for one million dollars... but I heard lots of my US friends say it was really good.

  5. I didn't buy the Beyond Chicken all that often, but it was absolutely the only item of its kind! :( Stinks that they're no longer making it.
