Pack-a-Snack #106

I have discovered two things:

There are store brand vanilla wafers that are vegan (banana pudding, here we come!).

Chia jam is both easy and amazing.

I then discovered a third thing:

Sandwich cookies made with vanilla wafers and chia jam are extra good. These have blueberry and strawberry chia jams.

This was part of my 2019 goal to try new ingredients. Chia seeds are popular, but seem mostly to appear in a disturbing-looking pudding. I do not like the tapioca balls in bubble teas or lumpy tapioca pudding, so I was never inclined in that direction. I started throwing chia seeds in smoothies and that was about it. But then I had some berries going south and I followed the recipe on the Bob's Red Mill package for blueberry chia jam and I was hooked. You don't need sugar to thicken it! It just tastes like fruit! I did add agave nectar as directed to sweeten it a bit but not so much it overpowered anything. This is definitely one of my new favorite things.

  2. I use chia seeds in my overnight oats, but I am yet to make jam with them. It is on my list of things to do!
