Recipe: Orange Oatmeal with Almonds

Today's #VeganMoFo prompt is "Winter Warmer"--"what's your go-to winter dish?" Today's post doesn't fit my "Vegan on the Go" theme, really, and it means taking a break from showing you my vacation food, but that's okay, because I'm glad to have the opportunity to share this recipe. Although I don't know if I have a specific winter dish, I do know that on cold mornings, nothing hits the spot like a bowl of hot oatmeal.

Vegans eat a lot of oatmeal, I think--or at least I find I do, since it's one of the most recognizable incidentally vegan breakfasts. When I'm staying with someone freaked out about what to feed me, I usually tell them I'll have oatmeal. But plain oatmeal isn't very interesting, and if I'm making oatmeal on my own, it's never going to be plain.

If you read Food for Dissertating outside #VeganMoFo, you know I set a goal this year to cook more out of my old cookbooks, veganizing non-vegan recipes and celebrating the incidentally vegan recipes when I can find them. This recipe for orange oatmeal is adapted from Taste of Home's Cooking for One or Two (2003), scaled down to make a single serving and jazzed up just a bit with almonds. But it was, as originally written, already vegan, so I didn't have to substitute anything.

It's not a whole lot to look at--oatmeal rarely is, of course--but the flavor is a nice change of pace, and it does have a pleasant orange color.

Orange Oatmeal with Almonds
Serves 1

1/2 cup water
1/4 cup + 2 tablespoons orange juice
Pinch of salt
1/2 cup quick-cooking oats
1/8 teaspoon grated orange peel
1 tablespoon brown sugar, plus a bit more for topping if you want
Sliced almonds

Bring the water, orange juice, and salt to a boil in a small saucepan. Add the oats and cook, stirring, for about 1 minute. Turn off heat, stir in orange peel and brown sugar, and allow to sit for 2-3 minutes to thicken.

To serve, top oatmeal with a sprinkling of additional brown sugar (if desired) and some sliced almonds.

  2. I love Oatmeal in the winter especially and that oatmeal sounds so bright and delicious. I'm sad I can't try it because I'm allergic to orange peel specifically (long story) but the flavor truly sounds lovely. It must taste amazing with the brown sugar too!

    1. Oh, no! Is it just the peel or all of the orange? If you could have orange juice, it would probably still be good, if less flavored of orange, with just the juice.

    2. It's the peel I believe but I stay away from it in general because I had an allergic reaction once and it was scary and I don't want to risk it!

  3. Oatmeal is also my winter breakfast...though quite often I continue with it in the summer because it's just so good!

    1. I wish I could get into overnight oats. Then I could have cold summer oatmeal. But I've not really succeeded at overnight oats yet.

  4. That sounds really lovely, the combination of orange and brown sugar would be a great way to start the day. I'm going to have to get my hands on an orange at my next shop.
