Monbento Original #26 (Double Tier)

Sauteed sweet peppers and onions, broccoli, some black sesame brown rice snacks, berries, chickpea loaf, and mashed potatoes.

This is the "Best Vegan Meatloaf" from Nora Cooks, though I halved the recipe and cooked it in the silicone trays that are made to make anything you cook fit perfectly into the Monbento box. (This is a Monbento heavy week for some reason.) It is pretty firm, as she promised, and I made some of it into an excellent meatloaf sandwich for dinner one night this week.

Meanwhile, I love the combination of sauteed sweet peppers and onions with mashed potatoes. I could probably make a whole meal out of that.
