I have been thinking for a while that I need to move away from the "Sequestration Meal" tag, because it's not very useful. So I'm going to try doing something with meals like this that is similar to my bentos, and tag them in accordance with their container. I don't know if that's all that more useful, but it at least will move me away from the whole "temporary" feeling that the COVID-originated tag gave me. So. This is a dinner bowl.
I don't know if any of my methods are logical, but it made sense to me.
Anyway. I'm still trying to focus on what I've got, so I avoided buying tortillas (my go-to for meals like these) and took another path. I made some simple Mexican rice with veggies (improvised based on my own instincts, it includes onions, peppers, carrots, and peas in addition to the non-negotiable garlic, cumin, tomato (paste), olive oil, and broth, plus some turmeric for good measure). I then opened a can of vegan charro beans (always delicious) and made some simple corn masa cakes (recipe from Cadry's Kitchen, using soy milk for extra protein). With those, I added some shortcut "guacamole" (it's just avocado with salt and pepper) and Tofutti sour cream.
This was delicious. And I didn't have to buy tortillas, and I still made a full meal without it seeming like just sides. If you're avoiding gluten, this is a great alternative, too.
