Sequestration Meal #699

 


I've been trying to spend a little less time in the kitchen while not compromising on my veggie addiction (I'm really glad I've trained myself to expect tons of veggies!), so I used some prepackaged Italian fusion tofu as the protein here. Alongside it, I made some spinach sauteed with onions and tomatoes, some more onions sauteed with orange bell pepper, and mushroom couscous (recipe from Eat Something Vegan). This was great!

One thing that minimizes kitchen time for me is cooking without recipes, which is why the veggie sides didn't feel like too much to do here. I could make some version of spinach sauté in my sleep, and peppers and onions require almost no effort besides slicing them and cooking them on low while I do everything else, stopping by to stir them occasionally. It looks like a lot of effort, probably, but this was a very easy meal.

I used parsley instead of dill in the couscous because that's what I had, and it was just as good. But of course I would eat mushrooms in almost anything anyway!
