Sequestration Meal #694
I was planning on something more elaborate--and a sauce, even--but sometimes our aspirations don't match our energy. So here we have some ginger sesame vegan meatballs (recipe from Minimalist Baker), Asian-style beet greens stir fry (recipe from Recipe Land), cucumbers with everything bagel seasoning, and cherry tomatoes with sea salt and cracked black pepper.
This turned out fine. It would have been nice with a sauce and steamed broccoli and carrot salad, etc., but I have had far too much going on for all that. The meatballs are pretty moist without a sauce, anyway--really softish bean-and-mushroom balls, more than a meatball--so no harm done.
I hope the hard season in my life eases up a bit soon. I'm doing all I can to make that happen, including making a point of eating well to avoid making it worse. But eating well sometimes can mean just chopping some veggies and adding them on the side, even if that doesn't feed my soul as much.
Let's all take care of ourselves as best we can, and get ready for tomorrow.
