I still had some of the pizza sauce and TVP sausage I made, so here are some English muffin pizzas (another toaster oven special) and a salad.

This is very basic. It's the salad I make when I'm just needing to get some veggies. It consists of green leaf lettuce, multicolored tomatoes, red onions, and cucumbers with a dressing made from a mixture of Italian dressing and vegan mayo. It's perfect. It's always delicious.

The pizzas are also super basic. I spread the sauce on a toasted English muffin, topped the halves with TVP sausage and non-dairy cheese, and stuck them back in the toaster oven until the cheese melted.

And it worked. It was very satisfying.
