Little Dishes #5
Most of my "little dishes" are Asian-themed, but here's something different: Green pea hummus (recipe from Tending the Table); corn, tomato, and cucumber salad; kalamata olives; and warm pita wedges.
Summer should be winding down, but it's been so dreadfully hot actual cooking gave way in favor of "assembly" type food. I had found I had way too many peas in my freezer, which was the inspiration for the hummus. I found I really loved the hummus! It was amazing with the pita and olives.
I made the salad with fresh corn, which was I think the first time I've done it that way. It was an extra step to shuck and cook the corn, but you can't really compare fresh corn to frozen, so I'm glad I did it this way. At least then I get to enjoy what summer does have to offer--the produce really is amazing.
