Interlude: Snacktime #5
It has been at least three years since I did one of these snack roundup posts, and some of these snacks are from quite some time ago, but hey, we can all use inspiration, right? I have been trying to get back into making my own snacks at home, because the cost of things is terrifying, so here are some options for you, too, should you have been in a rut and would be looking for ideas.
1. Graham Crackers with Fun Toppings
Graham crackers with peanut butter or with chocolate or with marshmallows are all great--but what about some version of all of them at once? Here are a few graham cracker squares with chocolate tahini and some mini marshmallows I cut up with some scissors and with peanut butter and mini dark chocolate chips. This was great with a cup of pumpkin spice herbal tea.
2. Wheat Thins, Amish Ham and Pea Salad, and Tea
It was one of those days when I wasn't sure whether I wanted a snack or a meal, and this is about halfway in between. I had a little ham and pea salad left, so I served that up with some hot decaf black tea and some wheat thins. I found this deeply satisfying.
3. Marshmallow Chocolate Chip Cookie and Cafix Latte
This recipe at the Curious Chickpea uses aquafaba rather than eggs and I was too intrigued to pass it up. The cookies turned out perfectly--utterly delicious--and were a delightful accompaniment to a Cafix latte.
4. Easy Fudge and Clementine Segments
When I discovered that someone has made sweetened condensed coconut milk, it opened up whole new possibilities for me, like this easy fudge from Loving It Vegan. I made some for a friend's birthday, but saved a few squares for myself (Shh! It's the chef's prerogative!), which I had as a snack the next day with some clementine segments. This was so good. I prefer old fashioned fudge, but you can't make it in a humid summer, so this is a great substitute.
5. No Bake Biscoff Chocolate Cups
I made these to use up a jar of Biscoff spread, from a recipe at Nadia's Kitchen. And truly, what's not to like? Chocolate? Biscoff? Perfection! I loved having these cups with some herbal tea.
