I had saved some vegan cheese sauce from when I made macaroni and cheese, planning to have this very meal: Cheesy quinoa with chickpeas and broccoli alongside carrots and mushrooms sauteed with peppers and onions.

Of all my avoiding-the-store, using-what-I've-got meals this week, this one probably looks the most intentional. It also tasted the most cohesive. When in doubt, cheesy quinoa with broccoli and chickpeas almost always comes to the rescue.
