Small Plate #9
I had half a can of chickpeas that needed using, so I stewed some chickpeas with tomatoes and onions and wilted in some baby spinach. I had that with some asparagus that inexplicably called my name at the grocery store that I steamed in the microwave and topped with a red wine vinaigrette. I finished the plate off with some improvisational rice patties made from leftover basmati rice, some onion, garlic, paprika, oregano, cumin, salt, pepper, flour, water, flax seeds, and Korean pancake mix (I added the pancake mix because it just wasn't holding together--basmati isn't sticky enough for rice patties).
This was a bit odd, but good! I am glad I answered the asparagus, even if it was out of season. I guess sometimes, one just needs asparagus.
