3-Tier Bottle Bento #43

Applesauce, cucumber slices with a cup of Everything Bagel seasoning, and some salted chocolate chip almond bites (recipe below).

I was totally unable to cook things, but stirring, I could do, so hence the almond bites. This is another variation on my no-bake peanut butter chocolate chip coconut bites. They really hit the spot. The kosher salt took them to the next level. They're also gluten free, and so is this lunch.

Salted Chocolate Chip Almond Bites
Makes six balls

3 tablespoons shredded coconut
3 tablespoons rolled oats
1 tablespoon ground flaxseed
1/4 teaspoon kosher salt, or to taste
1 tablespoon dark chocolate chips
3 tablespoons almond butter
1 tablespoon maple syrup

Mix coconut, oats, flaxseed, salt, and chocolate chips in a bowl. In another bowl, mix almond butter and maple syrup, then dump into the dry ingredients and mix everything together. Form six balls from this. Refrigerate to firm up if you like, or serve as they are.
