Happy Jackson Snack Boxes #64



Sauteed mushrooms and tomatoes, lemon pepper asparagus, a dark chocolate peanut butter cup, a carrot cake flavored Oreo, my own blueberry mango salad with poppy seed citrus dressing (recipe below), and quinoa mixed with a bit of Morningstar Farms porkless shreds.

After all that time without going to the store, I was desperate for some color, and here I have plenty! (Got to love 99-cents-a-pound asparagus!) I made the quinoa with a mix and used broth as suggested, and it was absurdly salty but still good. When I had it for dinner, I got hungry too quickly afterward so I added some of the porkless shreds. They went really well together.

The peanut butter cup is made by Brooklyn Born. I've bought it a few times. The peanut butter is more creamy than fluffy, as most of us probably grew up expecting. They're good, but I think I like Justin's better. A co-worker had brought fancy chocolate back from vacation abroad and all of it had dairy in it, so I bought a treat for myself to prevent feeling left out and deprived as everyone kept working their way through all that foreign chocolate.

I loved the carrot cake Oreo cookie! The cream cheese filling has no dairy but tastes so authentic! (I had a coupon. Oreos are not a common treat for me. But I felt I'd earned a treat after resorting to oatmeal for lunch last week.)

I made this fruity salad because both honey mangoes and blueberries were on sale. I don't know whether a previous encounter with a website implanted the idea in my brain or I just came up with putting poppy seeds on mango on my own. I think I may have gotten the idea of poppy seed dressing on fruit in general from some 1960s cookbook. It doesn't really matter, I guess, because it was really, really good and I will definitely take the opportunity to make it again. As soon as I tasted it I knew I had to write down what I did so I could recreate it.

Honey mangoes are smaller than your typical mango, so it makes sense to eat a whole one in one serving. I hadn't had them before but they are delightful. The flavor is pretty similar to the more common kind you find in the grocery store, so half of one of those would be just fine to substitute.


Blueberry Mango Salad with Poppy Seed Citrus Dressing
Serves 1

1 honey mango or 1/2 regular mango, cubed
1/4 cup blueberries
2 tablespoons orange juice
Splash of lemon juice
1/4 teaspoon agave nectar or bee-free honey
1/4 teaspoon poppy seeds

Mix orange juice, lemon juice, sweetener of choice, and poppy seeds. Toss with blueberries and mango.

  1. Whoah that’s a fantastic deal on asparagus! I swear asparagus just tastes like an optimistic promise of spring.... :) glad you picked up some chocolate treats for yourself! I love a good little chunk of dark chocolate.
    I’ll have to look for those honey mangoes, I usually buy frozen mango and then eat it semi defrosted since it’s like mango sorbet. The dressing sounds tasty and really easy!

  2. Justin's Peanut Butter Cups are life! I don't think anything else can compare to them.
    We don;t get all the fun flavours of Oreo's over here, but I wish we did. I'd love to try the carrot cake one. I did get to try some Cinnamon Bun flavour once, but they tasted a bit funny.

  3. Oh wow!! This meal looks so colorful and fresh and I'm sure it was exactly what you wanted/needed this week! I hope that all of the nutrient dense foods will help you feel so much better. The mango blueberry salad looks incredible (mango and berries is a favorite of mine!) and I love the idea of the dressing! A peanut butter cup sounds awesome right about now.
