Lunchopolis #69

A colorful salad of butter lettuce, red leaf lettuce, avocado, cucumbers, grape tomatoes, red onions, and corn; garlic croutons; my creamy dill dressing; yesterday's wagon wheel pasta salad; and yesterday's cannellini bean salad.

I have never really had the impulse to put corn in salad. I think this reflects my feeling of missing the colors last week. But I liked it, so I may be doing that again sometime! I know corn in leafy salad is not unheard of, but it's also not the most typical thing. I have a friend who likes to put in raw yellow squash slices. What unusual salad ingredients do you like?

  1. Oooh I love corn in a salad! That looks so delicious and I'm sure the colors and freshness have been so great after going a while without it. That salad really looks delicious, I definitely need to make one soon! The pasta salad sounds really delicious as well! I love adding fruit into my salads and I really like corn in there as well!

    1. I sometimes make salad with fruit. There was a salad I used to make a lot as an omnivore that had strawberries and blue cheese. If I ever find a good vegan blue cheese, I'm going to have that one again.

    2. I used to make a salad with apple, almonds or walnuts, dried cranberries and goat cheese in my pre vegan days. I still eat it now without the goat cheese but if vegan goat cheese ever becomes a thing I'll be so excited!

  2. I love corn in salad. I don't really know if I put anything in salad that would be considered too unusual. I guess I am pretty standard. I love your salad selection for lunch!
