Skater Lunch Box #57

Tofu ravioli with tomato sauce and Follow Your Heart vegan Parmesan.

I try to keep some easy frozen food around for the times I just...can't. I usually try to avoid relying on them because they tend to be expensive, but head cold + myasthenia gravis = a problem best to just throw money at. So it was time to pull the tofu ravioli out of the freezer.

This is SoyBoy tofu ravioli, which I had to have when I saw it at Wegmans. I hadn't had ravioli since before I became vegan, and I used to love filled pasta. This did not disappoint! It tasted very much like a ricotta filling and the texture was just right. Plus it was a meal that consisted of me boiling some water, dumping in the pasta, stirring a little, and then topping the pasta with some sauce from a jar. It was a perfect meal for when I couldn't bear to do much. Next time, I'm going to try the fancier version (spinach pasta with an herbed tofu filling, called "Ravioli Verde").

  1. Oooh that ravioli looks amazing and I love your presentation. I totally understand what you mean, sometimes you just need to splurge a little on convenience and make it up later. I hope that you are feeling better!

    1. Thanks! I think food tastes better if it's pretty (I think there are studies done on this, actually). I just generally need to be kinder to myself about money when I'm really sick like that, so I appreciate your support of my choices!

  3. I love soyboy tofu products! Their smoked tofu is my favorite smoked tofu i’ve ever had- i have never seen their ravioli though.
    And good lord yes when you are sick and Just Can’t Even Deal totally outsource whatever possible! The thing is even though the ravioli does sound expensive it’s going to last more than one meal per package and is still way way less than ordering delivery or take out. Just channel your inner millennial and say to yourself “YOLO” 😂

    1. They do make great smoked tofu! I don't know if it's my favorite because it's pretty much the only kind available to me. And yes, of course it is cheaper than ordering in--which I could absolutely do but it never occurs to me.

  4. I'm glad the ravioli were good! So often frozen foods can end up being underwhelming. I am still looking for a good ravioli here, though there is a new brand in the supermarkets that I must get around to trying.
