Temari Rabbit 2-Tier Bento #115

Mashed sweet potatoes (recipe from the Simple Vegan), slices of mini chickpea meatloaf (recipe from Nora Cooks), steamed broccoli, and mango chunks.

I was feeling like a bad vegan for not eating more sweet potatoes (why are vegans supposed to eat so many sweet potatoes?), so I bought some without a clear plan. It occurred to me to try some mashed sweet potatoes when I decided to make this chickpea meatloaf, because when I have meatloaf with mashed potatoes I usually want gravy but chickpea meatloaf recipes tend to call for a ketchup glaze and gravy doesn't go with that. Enter something that did sound like it would go with ketchup glaze without making me want gravy. It was lovely! Bonus points for being just as nice to eat at room temperature. I highly recommend both recipes.

  1. Haha I know, I feel like there are certain foods that I'm supposed to love. I hate kale and sweet potatoes aren't a fav either. Yours do look pretty delicious and chickpea loaf sounds awesome! Your broccoli is so vibrant and I have been craving mango like crazy lately. I can't wait for summer fruit to be in season, it's all I'm craving lately! I'm glad you enjoyed it so much, I bet your body was loving all of that goodness just as much as your tastebuds!

    1. That chickpea loaf recipe was pretty easy! There is a lot of chopping, though, so you may want to save it for one of your good days. I loved it.

  2. The chickpea loaf sounds tasty! I’m a big fan of the ketchup topping. Too funny about the sweet potatoes but you’re also right! I think avocados fall under that same category.

  3. I didn't know that sweet potato was on the must eat vegan list! I do really like them, though I don't eat them that often.

    1. I like them but I only have a few ways to prepare them and so I rarely think of them. They are pretty great, though!
