Thermos 3-Tier Bento #32

Cannellini bean salad (almost, but not quite, this one from Taste of Home), chocolate-orange ambrosia, and wagon wheel pasta salad.

What I love about having a better-stocked fridge is that I can do things like this--I was still pulling stuff out of my pantry (a can of beans, some pasta, some olives) but I had veggies and a bit of color with it. I could have used more color, but there really were lots of veggies here--and I'm amazed how deep green celery becomes when you put balsamic vinegar on it. This combo was not my original plan but it doesn't matter. It was really, really good. These mini wagon wheels are so fun, and even though I was largely just playing that one by ear I thought the salad tuned out super well.

Ambrosia is an idea from Cookery for 1 or 2. I added mini dark chocolate chips, although you don't really need them. It's essentially just segments of citrus fruit sprinkled with coconut.

  1. I love a good bean-y salad thing! I was making this chickpea sunflower seed one on repeat for a looonng time- without the maple, with more mustard, and usually dry dill (without garlic sauce, so it was more of a bean salad)

    Those little wagon wheels are so fun! And pasta salad reminds me of summer which is always a good thing

  2. Ooooh this looks so good! I love that there is always a little something sweet in your boxes, it's a perfect way to finish off a meal. Oranges are one of my favorite fruits but I can't eat them anymore, wah! I'll have to live vicariously through you!

    1. I'm so sorry you can't have oranges! They're some of my favorite fruits. I hated oranges growing up, though--too acidic, maybe? I can't always eat them because of one of my many health issues, but right now that one is behaving okay so oranges it is!
