Dinner Bowl #87

 


I'm more proud of this than I've been of anything I've cooked in a long time!

I had a yellow potato on hand--just one, though. But I also had a sweet potato. And some carrots. So I boiled those together and made mashed root veggies inspired by a recipe from Two Kooks in the Kitchen. I also put in the end of a bag of frozen spinach, some Earth Balance, and unsweetened soy milk.

I steamed some broccoli, which was still good if starting to show signs of stress, for a reliable side.

There were a few odds and ends in the fridge that also needed using--about a half a can of diced tomatoes, some leftover barbecue sauce, and half an onion. I cooked the onion in olive oil, then added some garlic. I then added a can of chickpeas, the canned tomatoes, the barbecue sauce, some soy sauce, and salt and pepper. It was pretty great!

Finally, I sauteed my last yellow onion with my last red bell pepper in a mix of olive oil and Earth Balance, and that finished things off.

I'm totally winning at the "no spend" thing this week!
