Dinner Plate #98
This seems a bit decadent and fancy, but it was actually very easy thanks to the oven. I was inspired to make this when I ran across a bit of stuffing mix in my cabinet. And since we're on the low spend cycle, I was going to need to make a full meal around that stuffing mix without buying anything new. I needed to use what was here.
And so I set forth! I had one potato left, so I seasoned it and roasted it in the oven. (You see about half of it here--I saved the rest for my leftovers.) I also had some frozen broccoli to roast. And I made tofu "turkey" slices (recipe from Jane Olivia) and a carrot casserole I veganized from an omnivore recipe. Everything cooked in the oven while I made the stovetop stuffing.
It was remarkably good! I think the "turkey" looks a bit weird but it tasted delicious. The roasted veggies were perfect, too. And the casserole! It mostly tastes of carrots, which is fine because I love carrots, but it was almost as if they got even more carrot-y! My veganizing came via soy milk, vegan butter, and Just Egg, which worked out fine.
I would probably not have made this if I weren't so pointedly avoiding buying things, but here we are! And it's still delightful at the moment.
